YesChilli Pan Fried Salmon with Spinach

About this recipe:
You can use any kind of fish in this recipe. If you would like more chilli heat, add a quarter of a teaspoon of YesChilli or add it in cautious increments to your cooking. If you would like less heat, reduce the amount of YesChilli stated in the recipe by half.

Ingredients

2 salmon fillets with the skin on

1 tablespoon of YesChilli sauce (half if using YesChilli paste and a teaspoon of oil)

1 teaspoon of soy sauce (optional)

Bunch of spinach or frozen spinach

1 glove of garlic finely chopped

Small knob of butter

Salt to taste

Directions

1. Place the YesChilli sauce in a frying pan. Allow to sizzle for about 20-30 seconds then add the salmon skin side down. Season with alt and soy sauce.

2. Fry for 2-3 minutes and turn over the salmon, frying for another couple of minutes, or until cooked thoroughly. Remove from heat.

3. Heat a sauté pan and add the knob of butter and allow to melt. Add the chopped garlic and sauté for about 1 minute.

4. Turn up the heat to high and add spinach and salt. Wilt the spinach tossing with tongs to coat the spinach in the butter and garlic. Once wilted or cooked, remove from heat and serve immediately with the salmon.

Tip: Serve with potatoes or rice and some gravy. Substitute the spinach with any vegetables of your choice.
